T-4: Muffins and Cornbread

Today is Tuesday, which means my evening is full of meetings with people in PST. However, one of my clients in Asia also wanted to talk to me today, so we spent several hours talking about his startup and better ways to present what he’s thinking to potential investors. (For instance, avoiding telling them that he only plans on giving this idea six months; if it isn’t profitable by then he plans on ditching it.)

Given the full load of meetings this evening, I took a break around 3pm and began baking. I’m happy to say that for the first time this trip, I’ve finally baked what I intended instead of making adjustments on the fly until it was edible.

Here are the pumpkin spice almond muffins:

I would have made them a little differently if I was at home, but they turned out well, so no complaints. (My host has already eaten two.)

I also decided to try my hand at a peach cornbread, since there was a set of canned peaches in the pantry that Sara sent for me. However, my host decided that she wasn’t keen on the canned peaches, having tried some herself, so instead I made a very boring honey cornbread with corn in it:

Given that the cornbread itself was uninteresting, I ate it with tomato jam from Ecuador, also courtesy of Sara. It’s delicious, despite not having peaches in it.

I can also safely say that I can still smell, which is excellent. 😉
